What is “Fireman’s Style BBQ Sauce”?
This oil and vinegar sauce is a delicious chicken basting sauce served all over New York state, especially during the outdoor grilling season. Some recipes use egg along with vinegar, oil and spices. It became popular with fireman when they used it to baste chickens for fundraisers. Traditional Fireman’s Style BBQ Sauce is not red and does not use tomato as a base.
One formulation of this recipe was developed by Dr. Robert C. Baker (1921-2006), a former Cornell University poultry science and food science professor who, reasoned that if he could develop a delicious sauce to baste chickens in, he could sell more chickens. His Cornell Chicken Barbecue Sauce recipe has stood the taste test of time, having been showcased for more than five decades at his Baker’s Chicken Coop at the New York State Fair in Syracuse, N.Y.
Dudley Poultry sells three kinds of delicious Fireman’s Style Sauces. Chiavetta’s Sauce, Stearns Sauce and Salamida’s State Fair Sauce.
